Chicken in Orange Sauce

One of my exceptions to my anti-cream soup stance, easy and really yummy.

To make a healthier version of this dish substitute the cream soups with reduced fat versions and cut the hot oil back to 2 Tbsp.

Ingredients:

1/2 C. Flour
1/2 tsp. salt
1/2 tsp. paprika
Dash pepper
Dash garlic powder
6 chicken breast halves
1-4oz. can mushroom with juice
1/4 C. hot oil
1 can cream of mushroom soup
1 can cream of chicken soup
2/3 C. orange juice
2 tsp. brown sugar
1/4 tsp. nutmeg


Directions:
Blend first five ingredients. Coat chicken with flour mixture and brown in hot oil. Blend remaining ingredients. Turn chicken and pour mixture over it. Cover and simmer about 20-30 minutes or until chicken is tender. Serve with rice and vegetable of your choice.

I tried this last week and it went over pretty good. I didn't have all the ingredients though and had to leave out the chicken soup. The kids really liked it. I had expected it to be a little more orangey, but that flavor was really mild in mine. For a shortcut I cut the chicken into smaller chunks to speed cooking time. I'm not sure it saved a lot of time, but it was easier serving for the kids. Also make sure you start the rice BEFORE you start the chicken (if your using other than instant rice). I forgot this and we served it over chow mein noodles instead, which was alright, but I think it would have been better with rice.

I made this tonight because I had chicken in my fridge that I had to use. Realized after I decided to make it that I didn't have any orange juice, but I did have pineapple-orange juice so decided to try it with that and make it chicken in pineapple-orange sauce. Turned out really good.
yes, Kristy, I forgot to mention in the recipe that it's not a strong orange flavor like in asian orange chicken. This is also really easy to adapt to what you have on hand, if you don't have chicken soup you can just use 2 cans mushroom. I often find that I don't have mushroom soup, like tonight. I used 2 cans of chicken and chopped up one can of sliced mushrooms really fine on top of the can of mushrooms the recipe calls for.
